Drip Coffee (Brunch Only)

  • We portion 145 g of Uncorporated ground coffee into deli cups.

  • At the beginning of service, you must have 5 portions ready.

  • Brew drip coffee in black pots when the first brunch order comes in.

  • Set up cups with 2 sugar packets, and place teaspoons as shown in the reference picture.

  • When placing a coffee or tea cup on the table, make sure the handle is positioned at the guest’s 4 o’clock.

  • Always take the pot to the table and pour at the table.

  • Refills are an additional $3.

  • Drip coffee is only available during brunch.

  • During dinner service, offer an Americano instead.

  • If pots are not empty at the end of service, store them in the fridge to be used the next day for iced coffee.

Decaf Coffee

  • Portion 15 g into ramekins (including the ramekin weight).

  • Decaf is prepared as an Americano.

  • Decaf can also be used for other drinks such as cappuccinos and lattes.

Matcha

  • Portion 11 g into ramekins (including the ramekin weight) and keep refrigerated.

  • When preparing matcha, whisk with water first, then strain before serving to avoid lumps and a muddy texture.
