Drip Coffee (Brunch Only)
We portion 145 g of Uncorporated ground coffee into deli cups.
At the beginning of service, you must have 5 portions ready.
Brew drip coffee in black pots when the first brunch order comes in.
Set up cups with 2 sugar packets, and place teaspoons as shown in the reference picture.
When placing a coffee or tea cup on the table, make sure the handle is positioned at the guest’s 4 o’clock.
Always take the pot to the table and pour at the table.
Refills are an additional $3.
Drip coffee is only available during brunch.
During dinner service, offer an Americano instead.
If pots are not empty at the end of service, store them in the fridge to be used the next day for iced coffee.
Decaf Coffee
Portion 15 g into ramekins (including the ramekin weight).
Decaf is prepared as an Americano.
Decaf can also be used for other drinks such as cappuccinos and lattes.
Matcha
Portion 11 g into ramekins (including the ramekin weight) and keep refrigerated.
When preparing matcha, whisk with water first, then strain before serving to avoid lumps and a muddy texture.
